Steps:

  9. Grill the Steak: Return the steak to the grill, re-insert the probe, and cook until the internal temperature reaches 130℉ for medium-rare, about 15-20 minutes.
  10. Rest and Serve: Remove the steak from the grill, let it rest for 3 minutes, slice thinly against the grain, and serve with the blue cheese butter.
