What Ingredients Do You Need? 

Below are the ingredients needed to make a chipotle chicken: 

  • Cumin powder 
  • Chipotle pepper in adobe sauce 
  • Chili powder 
  • Sliced onion 
  • Grounded black pepper 
  • Garlic powder 
  • Water 
  • Kosher salt
  • Boneless chicken thighs 
  • Olive oil 

 How to Make a Copycat Chipotle Chicken

1. Make a marinade 

First, you need to marinate your chicken before grilling. Next, you need to mix your ingredients in a blender. 

Add cumin powders, garlic powder, kosher salt, grounded black pepper, olive oil, chili powder, sliced onions, and chipotle pepper adobo sauce. Blend until everything is well mixed up, and then add enough water depending on the volume of ingredients you used. 

When everything is well mixed up, you have your marinade.

2. Prepare the chicken 

You opt to remove the skin of the chicken thighs or leave it. Then use a mallet to pound the chicken thighs. 

Next, place your boneless chicken thighs in a Ziploc plastic bag. Then add your marinade to the same bag. Ensure everything mixes up quite well. 

Marinate the chicken thighs for about 8 hours. However, you can marinate longer (overnight) or shorter (about two hours). 

3. Prepare your electric grill

Once your chicken thighs are well marinated, it’s time to work on your grill. First, ensure your electric grill is clean. 

Then, preheat your grill over medium-high heat before cooking on it. Attain about 350-400 degrees F on the grill. 

As your indoor electric grill preheats, remove the chicken from the bag. Also, do away with the remaining marinade in the Ziploc bag. 

4. Cook the chicken on the preheated grill 

Place your marinated chicken thighs over the preheated grill for cooking. Let it cook for about 6- 12 minutes. Flip the chicken thighs every 3 minutes to ensure your chicken is cooked evenly on all sides. 

To know whether the chicken is cooked, use a meat thermometer to check the internal temperature. The ideal internal temperature of the chicken is 165 degrees F. Also, ensure your chicken thighs aren’t pinkish on the center part. 

A well-cooked chipotle comes out with dark charring and grill marks. 

5. Rest, chop and serve 

Once your chicken thighs are cooked, remove them from the grill and place them on a platter. Allow the chicken to rest for about 5 minutes before chopping.
