    • 1 teaspoon Worcestershire sauce
    • Freshly ground black pepper to taste

Steps:

  1. Prepare the Marinade: Whisk together soy sauce, water, onion, garlic, red wine vinegar, oil, ketchup, Worcestershire sauce, pepper, and sugar in a small bowl.
  2. Marinate the Steak: Place the steak in a large resealable plastic bag, pour the marinade over it, and refrigerate for 6 hours or overnight.

  8. Increase Grill Temperature: Transfer the steak to a platter, increase the grill temperature to 450℉, and preheat with the lid closed.
  9. Grill the Steak: Return the steak to the grill, re-insert the probe, and cook until the internal temperature reaches 130℉ for medium-rare, about 15-20 minutes.
  10. Rest and Serve: Remove the steak from the grill, let it rest for 3 minutes, slice thinly against the grain, and serve with the blue cheese butter.
