Transform your classic pot roast into a gourmet meal with this smoked chuck pot roast recipe. Utilizing the robust flavor of Traeger’s wood pellets, this dish brings a unique twist to a traditional favorite.
To start, gather the following ingredients: a 3-pound chuck roast, garlic powder, onion powder, kosher salt, black pepper, red bliss potatoes, carrots, pearl onions, ancho chile powder, sherry or red wine, fresh rosemary and thyme leaves, dried chipotle peppers, and beef stock.
Begin by setting your Traeger grill to 180°F, allowing it to preheat with the lid closed for about 15 minutes. If your grill has a Super Smoke feature, use it to enhance the flavor. While the grill preheats, mix garlic powder, onion powder, salt, and pepper in a small bowl and thoroughly coat the chuck roast with this spice blend.
Place the seasoned roast directly on the grill grates and close the lid. Let it smoke for an hour and a half, allowing the spices to infuse and the wood smoke to permeate the meat. Once smoked, remove the roast from the grill and increase the grill temperature to 275°F.
Transfer the smoked roast to a large Dutch oven. Add halved red bliss potatoes, 2-inch pieces of carrots, peeled pearl onions, a teaspoon of ancho chile powder, a cup of sherry or red wine, a tablespoon each of fresh rosemary and thyme leaves, two dried chipotle peppers, and two cups of beef stock. Cover the Dutch oven with its lid and place it back on the grill. Close the grill lid and let the roast braise for 4 to 5 hours, until the meat is fork-tender and the vegetables are perfectly cooked.
This smoked chuck pot roast is best served with your favorite roasted vegetables or creamy mashed potatoes and a generous ladle of gravy made from the braising liquid. The combination of smoked, tender meat with the hearty vegetables and rich, aromatic broth creates a memorable dining experience.
This smoked chuck pot roast recipe is a delightful way to bring new life to a beloved classic. By smoking the meat and braising it with flavorful ingredients, you achieve a depth of flavor that's hard to beat. Whether for a family dinner or a special occasion, this dish is sure to impress and become a staple in your culinary repertoire.
